Hunan Porvince is located in South Central china, south of the middle course of the Yangtze River 长江, and south of Lake Dongtin 洞庭湖 (hence got the name Hunan meaning “south of the lake”). Hunan Cuisine, also know as Xiang cuisine, consists of the cuisines of the Xiang River region (湘江派), 船拐子江湖派, Dongting River (洞庭派), Chang Sha region (长沙派), western Hunan province Tu Tribes (土家族). Hunan cuisine is one of the Eight Great Traditions of Chinese cuisine and is well known for its hot and spicy flavor, fresh aroma, abundant use of fresh ginger & garlic, and deep color. Common cooking techniques include Dry Pot, Pop Frying (stir fried with jet flame at nearly 600-800 degrees Fahrenheit. Food come out fresh and clean without starch used), Stewing, Steaming, Braising, Smoking, Deep Frying and Chili Popped.
