Hunan cuisine is one of the Eight Great Traditions of Chinese cuisine and is well known for its hot and spicy flavor, fresh aroma, abundant use of fresh ginger & garlic, and deep color. Common cooking techniques include Dry Pot, Pop Frying (stir fried with jet flame at nearly 600-800 degrees Fahrenheit. Food come out fresh and clean without starch used), Stewing, Steaming, Braising, Smoking, Deep Frying and Chili Popped.
